The materials are simple and you probably already have them at home.

You will need 30 minutes and:

Or cup full of yogurt

Or a cup of extra virgin olive oil

3 tablespoons fresh lemon juice

2 tablespoons white wine vinegar

1 tablespoon fresh orange juice

1 tablespoon Dijon mustard, optional

1 small clove of garlic, finely chopped

Or teaspoon of salt

black pepper

Salad:

1 corn or half a can of corn

3 cups grated carrots

1 λι cup grated red cabbage

1/2 cup raisins

Or a cup of fresh parsley, finely chopped

Or a cup of fresh mint, finely chopped

30g cooked chicken breast (preferably roasted)

How to make it:

Make the dressing: In a small bowl, beat all the ingredients together until combined.

Make the salad: In a large bowl, combine the corn, carrots, cabbage, raisins, parsley and mint. Add the chicken and dressing.

Mix well.
