What you will need:
2 cups all purpose flour
3 teaspoons of baking powder
½ teaspoon of salt
2 large eggs
1 cup Greek yogurt
¾ cup oil
Zest of one orange
â…“ cup freshly squeezed orange juice (from about 1 orange)
1 cup of sugar
Icing
1 cup powdered sugar, sifted
2 tablespoons of Aperol
How to make it:
1. Preheat the oven to 170°C. Line a cake pan with parchment paper.
2. In a large bowl, whisk together the flour, baking powder and salt until combined.
3. In another large bowl, whisk the eggs, yogurt, oil, orange zest, orange juice, and sugar until combined.
4. Pour the wet ingredients into the dry ingredients and mix with a silicone spatula until a smooth dough without lumps is formed.
5. Pour the batter into the cake pan and bake until a toothpick inserted in the center comes out clean, 40 to 45 minutes.
6. For the icing: In a small bowl, whisk together the sugar and Aperol.
7. When the cake is completely baked, pour the glaze over it.
