Chef Paulo Shin leaves Komah, an award-winning Korean restaurant in SP

Chef Paulo Shin is no longer in charge of Komah, an award-winning Korean cuisine restaurant in Barra Funda, west of São Paulo. The announcement was made this Tuesday, 11, via the press office.

The text states that “the reason for the dismissal is an incompatibility with the partner, Alessandro Papi, responsible for the financial and administrative management of the company and who assumes 100% of the operation”.

With Shin gone, Daniel Park, who served as the restaurant’s executive chef, takes over the restaurant’s kitchen. Park started working at the house as an intern, became a sous-chef, and then an executive chef.

Opened in 2016 under Shin’s baton, Komah offers a contemporary reimagining of Korean classics. The proposal worked both to present that gastronomy to a wider audience, and to take more people to the then peaceful Barra Funda, a neighborhood that is currently experiencing a moment of cultural effervescence.

The address collects awards such as the best new restaurant (2016) by this Guide, the best novelty, in 2017, the best Asian, in the years 2018 and 2019, according to the special O Melhor de sãopaulo, from São Paulo. In 2019, the house entered the Bib Gourmand category, the Michelin Guide’s good and cheap, and in 2021 it became part of the list of the 100 best restaurants in Latin America created by the 50 Best award, in 88th place.

With the departure of Komah, Shin will dedicate himself to new projects.
