A small cafeteria, with a space of just 15 m², has caused queues on Rua Oscar Freire, in Jardins. Customers can wait up to an hour and a half to taste the hot dogs at PoPa Artesanal, at number 502 on the street.
The address is open from Thursday to Sunday — the owner, Alexandre Park, takes the other days off to produce all the ingredients used in the sandwich: from the sausage, made with ham and pancetta, to the milk bread, fermented for 12 hours. The only exception is the Parmesan cheese that tops the snack.

Park is Brazilian of Korean parents and went through restaurants like Murakami and DOM Advogado, he found cooking a hobby. He started in the business selling hot dogs from a cart near Beco do Batman, in Vila Madalena.
Business grew and he opened a store next to Avenida Paulista, also tiny. He had to take a break from the pandemic and resumed the cafeteria at Oscar Freire in 2021. Park says sales have increased at the new location. The movement is greater on weekends. Hot dogs are sampled at half a dozen sidewalk tables.
Like PoPa, there are other establishments in São Paulo that specialize in recipes prepared between two slices of bread. Among them are novelties, such as Bao N Sando, dedicated to baos and sandos, of Asian origin, and Ixe, with an extensive menu of snacks.

In March, chef Roberto Satoru, from the restaurant Icon Asia, opened a shop dedicated to baos and sandos — a Japanese sandwich made in sliced bread. There are five bao fillings, like the Buta no Kakuni (cooked pancetta, cucumber and coriander; R$35). On the other hand, there is the oxtail with boiled egg, for R$38.

Chimi Choripanes
It specializes in choripan, a typical Argentinean sandwich prepared with sausage. The classic is made with braised artisan bread, artisanal sausage (pork, lamb or soy) and chimichurri, a herb-based sauce. It costs BRL 30.

From the Fasano group, it specializes in panini, Italian sandwiches on ciabatta bread. They are prepared with 11 fillings, such as raw ham, brie cheese, lettuce and tomato. The option costs R$74 and comes with green salad or rustic potatoes.

hot pork
It serves hot dogs signed by Janaina and Jefferson Rueda, chefs at A Casa do Porco, voted the seventh best restaurant in the world. The menu gained two news recently. One of them is prepared with grilled royal pork sausage, lemon mayonnaise, vinaigrette and sprouts in a handmade baguette and costs R$26.

Ixe Sandwiches
New in Pompeia, the snack bar has 16 sandwich options on the menu. One of the suggestions is the one with homemade roast beef, pickles, red onion and tartar sauce on naturally fermented bread, for R$36. To go with it, the signature drinks are made with Ixe cachaça.

Labaki Delishop
Chef Paula Labaki, a grill that is a reference in the meat world, prepares sandwiches stuffed with pastrami, cured, smoked and slow-cooking beef brisket. There are suggestions like Labaki (R$55), which has pastrami accompanied by cucumber pickles and mustard sauce on country bread.

Matilda Snacks
It’s chef Renata Vanzetto’s more informal house, with a snack menu. Some of the bestsellers are the crazy crispy chicken (R$38), which has crispy chicken, pink mayonnaise, pickled cauliflower and watercress on brioche bread, and the bun bah (R$42), with chicken, guacamole, spicy mayonnaise, pickled red onion, cilantro and tomato on brioche.

With an informal touch, the restaurant assembles sandwiches in pitta bread, originally from the Middle East. It can have fillings like schnitzel, falafel or pastrami. The Deli Schnitzel (R$39) is made with breaded chicken breast, chipotle pepper mayonnaise, crispy onion and pickled cucumber.

The snack bar dedicated to hot dogs offers eight options, with homemade ingredients. The most requested is the Classic USA, assembled with ham sausage, milk mayonnaise, tomato and diced sunomono onion on milk bread. Top with fine shavings of parmesan. It costs BRL 32.

From the plate comes a typical sandwich from Rio Grande do Sul, the xis. It is made in a 15 cm diameter pressed hamburger bun. It can be stuffed, for example, with beef ribs, dish and mozzarella cheese, bacon farofa, corn, peas, tomato, American lettuce, mayonnaise, mustard and ketchup.
