Easy and healthy
Homemade Healthy Peanut Butter Granola Bars. These chewy bars are easy to pair with a lot and are delicious with a little extra dark chocolate.
What you will need:
- ½ cup creamy natural peanut butter
- 1 1/2 tablespoons virgin coconut oil
- 3 tablespoons of honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/3 cup ground flaxseed
- 1 tablespoon of chia seeds
- ½ cup oats, gluten-free
- 1/3 cup roasted almonds, coarsely chopped* (or pecans)
- ¼ cup unsweetened shredded coconut
- For above:
- 2 tablespoons roasted almonds, coarsely chopped
- 2 tablespoons of dark chocolate chips
- ½ teaspoon of coconut oil
How to make it:
- Add the peanut butter, coconut oil, honey, vanilla and cinnamon to a medium saucepan over low heat. Stir occasionally until the mixture is smooth and creamy. Remove from the heat and quickly stir in the flaxseed, chia and oats. Add the almonds and shredded coconut and mix until combined.
- Line a baking tray with parchment paper. Pour in the granola mixture and spread evenly, then press down into the pan. Sprinkle the remaining roasted almonds on top.
- Place the dark chocolate chips and ½ teaspoon of coconut oil in a microwave-safe bowl. Microwave in 30-second increments, stirring in between, until the mixture is completely smooth. Drizzle diagonally over bars.
- Cover the bars with aluminum foil and put them in the freezer for 15-20 minutes or in the refrigerator for 30 minutes-1 hour or until the mixture is firm. Remove the bars from the pan and cut into 8 bars. Store the bars in the fridge, they will last up to 1 week in the fridge.
