In the Southern Hemisphere, winter began on June 20th, promptly at 5:51 pm (Brasília time), however, the temperature should only drop in São Paulo from July onwards. Although forecasts of sunny weather are predominant, at the first drop of the thermometer, there is a list of broths to try.

Santiago Winery and Asador Winery

The cold may not last that long, but the soup and broth season runs until September 22nd, the end of winter, in both restaurants. Among the options are the caldo verde, which in addition to cabbage and parsley, contains mashed potatoes and chorizo ​​(R$44), the cassava cream (R$46), with melted manchego cheese and the pea cream (R$ 49), the difference being this one is the crunchy jamón.

Adelaide Bar

For those who love a bar and a cold beer, even in winter, this place has the solution. The broths, served in an American-style glass, have five options. The feijoada (R$19) has crispy pancetta, while the carioca bean broth (R$22) is served with eggplant dumplings. The quenga broth (R$ 19) has bacon and coriander. Classics such as green and cassava broths (both R$22) are also on the menu.

Bella Paulista

At the 24-hour mega bakery, there is a soup buffet (R$86/kg), daily, until 4am. There are five options, with emphasis on the traditional ones: chicken soup and caldo verde, which are fixed. During the week the flavors change between beans, lentils with filet mignon, pumpkin with dried meat, heart of palm cream, vegetable cream, cassava cream, leek cream, minestrone, meat capeletti and chickpeas with filet mignon.

Dona Deôla

The bakery’s five units serve a soup buffet (R$62.90 per person) every day from 6pm. There are six hot food options, but in addition to these, there are salads, cold cuts, pates, pasta, foccacia, mini hot dogs and desserts. The soups change daily, with the caldo verde and chicken soup being the only fixed ones. It is possible to buy the bowls separately (R$ 28.90), and, among the highlights, there is shrimp bisque and cassava soup with dried meat, as well as two vegetarian options per day.

Freddy

The restaurant, which presents Parisian cuisine, offers a winter menu that includes fish soup (R$99), heart of palm soup (R$69); onion (R$ 62); tomato (R$ 64); and oyster soup with onion and fresh cream (R$83).

La Brunet

The bakery has an inviting atmosphere for those who enjoy quick snacks at the counter or meals in the lounge. You can try everything from bread to Japanese food, but in winter, from 6pm onwards, there are soups and broths. The options vary depending on the day, including vegetable soup, cassava broth, green broth and chicken soup. All come with toast and parmesan cheese (R$ 32.90, 500g).

La Peruana

The restaurant’s Peruvian cuisine features two typical soups on the menu (both R$82). The Levantamuertos, is made with the catch of the day, shrimp, squid, mussels and vongole and the Parihuela, uses the same ingredients, as well as beer and coriander.

Le Jazz Boulangerie

Between June and August, a soup buffet (R$54) with at least three options will be available from Monday to Friday at the Franco-São Paulo bakery. On the menu, there is pumpkin cream with ginger, cassava with carrot and vichyssoise, leek and potato soup. A selection of wines by the glass is also available to accompany.

Marie Marie Bakery

In a store with foliage painted on the entrance wall, the bakery with a rustic-chic style has natural fermentation bread as its flagship product. This winter, visitors can try a cassava cream (R$42), made with vegetable broth and fresh cream. Another option is the capeletti with meat and vegetable broth (R$ 65), served with meat filling or ricotta with parmesan.

calf’s foot jelly

The restaurant — which takes its name from a broth famous throughout the country — is a mandatory stop for anyone who wants to try a recipe prepared in the same way for five decades. The mocotó broth is served in four sizes (R$22.9 to R$69.9). In addition to this, the restaurant recommends the braised pork knuckle (R$ 98.9), served with corn couscous, vegetables and roasted pumpkin.

Portuguese Ranch

The restaurant offers a selection of soups until the end of winter. There is green broth with Portuguese chorizo ​​(from R$47), seafood soup, made with squid, octopus and shrimp (from R$65) as well as cream of asparagus (from R$45). But the highlight of the menu is the stone soup (R$46), a typical Portuguese dish, whose creation is surrounded by myths and legends. In a bowl, there are red beans, pig ears, meat broth and special seasonings.

Notorious Fish

In winter, the restaurant’s menu, which specializes in fish and seafood sandwiches, includes a creamy seafood soup, clam chowder (R$60). Serving two people, it is sold on Italian bread and finished with bacon, parsley and seaweed crackers.
