A good alternative to pancakes: the crepe.
Most crepe recipes are about 22 to 24 crepes, which is not convenient if you are alone and do not intend to invite a small French village for breakfast. So, below you will find a customized recipe for one person.
All you need is four ingredients – flour, butter, milk, egg – and a whisk. This recipe will give you three small crepes, giving you three different filling options.
What you will need:
1/4 cup flour for all uses, sifted
1/4 cup plus 2 tablespoons whole milk
/ 2 tablespoons unsalted butter, melted
1 1/2 tablespoons egg * (I explain below what I mean)
a little salt
How to make it:
Beat an egg in a small bowl for a minute until fluffy – the yolk and egg whites should be fully combined. Then measure one and a half tablespoons of the beaten egg and keep the rest.
In a small bowl, mix the flour, milk, butter, egg and salt.
Beat the ingredients together until no lumps remain.
3. Heat a non-stick pan over medium to high heat, and spread a little butter. If you have a pancake maker, use one.
4. Pour 3 to 4 tablespoons of the porridge in the center of the pan and turn it around so that the porridge covers the pan.
Bake the crepe for 45 seconds until the surface of the crepe starts to look dry.
6. With a spatula turn the crepe on the other side. Bake for another 15 to 20 seconds, until golden brown.
7. Wrap the crepe in the middle and then another one to create a triangle. Repeat with the rest of the porridge and serve with syrup, praline, fruit, jam, whatever you like. For some of us, a lemon zest and a generous sprinkle of powdered sugar are enough.
