Barley with shrimp, asparagus and feta

We read the following recipe with barley, shrimp, asparagus and feta at stylist.com. The recipe is from Yasmin Fahr’s book, Keeping it Simple, which has inspired the recipe from her travels in Greece.

In her tips she mentions that you can add cherry tomatoes to the asparagus and that the big secret is the oregano in the shrimp. For four servings you will need twenty-five minutes.

What you will need:

200 gr barley

2 tablespoons olive oil

2 cloves garlic

1/2 teaspoon dried chili

250 g asparagus

10–12 shrimp

2 tablespoons oregano

15 g basil

Light, creamy asparagus soup

A creamy, light and healthy soup with asparagus. If you like the taste of asparagus this is a soup that you will enjoy on the weekend or one of the following nights. It is easy, fast and with simple materials. If you do not care about calories and you want to make it even tastier you can put sour cream instead of yogurt and sprinkle with crispy bacon at the end.

For four servings you will need a total of half an hour and the following ingredients:

1 tablespoon olive oil

1 leek, finely chopped

1 clove garlic

600 g asparagus, peeled from the stalks and cut in half

1/2 cup peas

salt and pepper

4 cups chicken or vegetable broth

1 cup water

1 cup yogurt

1 cup parmesan
