One of the big surprises of my last trip to Salvador, at the beginning of the year, was the tasting menu at the Manga restaurant. Chefs Katrin and Dante Bassi develop an original and very creative cuisine, with respect to the seasonality of the ingredients. The couple of chefs met when they worked at DOM, in São Paulo, but they already had stints at restaurants such as Schauenstein Schloss, in Fürstenau, Switzerland, and Daniel, in New York.
The Manga restaurant offers two types of tasting menu: one with seven stages, with dishes that have become house classics and seasonal creations; and another with 12 stages, where they present more complex preparations that reflect the essence of the chefs’ cuisine.
Below, some highlights of the menu I tried at the restaurant, located in Rio Vermelho, in Salvador. The good news is that the chefs will be coming to São Paulo for a night at the Cantaloup restaurant on May 24th. It is recommended to make a reservation as there will only be 50 seats and the price is R$ 280 per person.

- Welcome drink: Samburá sour, made with Bourbon, uruçu honey, samburá, lemon juice, egg white and dehydrated pollen.
- Couvert: consommé with bouquet with seele bread.
- Raw oyster, oyster mayonnaise, hot pepper ice cream, tomato gelatin and edible oyster shell.
- Lobster tartar, marrow, okra seed, lobster botarga and lobster chips.
- Lamb Crudo dorpergoat cheese, olive oil powder and yogurt with spring water.
- Crab soup with “sauerkraut“, mushroom and pasta “stellette“.
- Smoked fish, grilled hearts of palm, noisette emulsion and mustard pickles.
- Beef rib, a thousand leaves of grilled chard, yolk gel with dashipickles of kombu and rib broth.
- Jambo and Brazil nuts.
- Cocoa: cocoa mousse with coffee ganache, cocoa honey gel, nibs and white chocolate.
