They basically look like macaroni, but they are made of oats. They are soft and chewy oatmeal cookies filled with a sweet and creamy marshmallow icing
You will need a total of 40 minutes to make about 18 cookies, so the recipe is probably one of the easiest and fastest.
You will need:
- 3 cups oats,
- 1â…” cups flour for all uses
- 1 teaspoon cinnamon
- Κι teaspoon baking soda
- Or teaspoon of salt
- 1 cup unsalted butter, at room temperature
- 1 άνι cup brown sugar
- Or a cup of granulated sugar
- 2 eggs
- 1 tablespoon molasses
- 1½ teaspoon vanilla extract
For the filling:
- 12 tablespoons unsalted butter, at room temperature
- 1½ cup marshmallow cream
- 2 cups powdered sugar, sifted
- Or teaspoon pure vanilla extract
- salt
How to make it:
Preheat the oven to 200 degrees. Lay two baking sheets with oil paste. In a blender, work it out oats, until it breaks into small pieces but not powder. Add the flour, cinnamon, baking soda and salt and beat a few more times until combined.
Using a mixer, beat the butter, brown sugar until creamy and combined. Add the eggs, molasses and vanilla extract and beat until combined. Add the dry ingredients and beat until smooth. Let the dough sit at cool room temperature for 5 minutes.
Form the dough into 1 ½ tablespoons balls and place with a gap between them in the pan. Bake for 9-11 minutes, until the edges begin to set, but the center is still soft.
Allow the cookies to cool completely, as they cool they will tighten. Repeat with the rest of the dough.
Beat the butter with a mixer, add the marshmallow cream and beat until combined. Add powdered sugar,. Cup at a time, vanilla and salt. Beat until combined.
Put the frosting in a bag with a large round edge. Put the right amount on a cookie and close with its lid. Otherwise spread the icing with a spoon or a small butter knife.
