Orange cake with nuts, if you are one of those who do not like ice cream

You need:

Or a cup of extra virgin olive oil

1 cup flour for all uses

1 cup roasted walnuts

2 teaspoons baking powder

Or teaspoon of salt

4 large eggs separated

2/3 cup honey

Or a cup of Greek yogurt

1 teaspoon vanilla

Grate 1 orange

Candied oranges:

1 cup oranges into thin slices

1 cup water

1 cup sugar

For the icing:

1 cup powdered sugar

1 tablespoon orange juice

How to make it:

Preheat the oven to 180 degrees. Lightly grease the sides and bottom of a baking tray or cake tin. Place a non-stick paper on the bottom of the pan and lightly grease. Sprinkle with flour and shake off the excess. Leave the pan aside.

Measure the flour and then in a blender, add a few tablespoons of flour and nuts. Grind to be grated but not too much. Add the remaining flour, baking powder and salt. Beat a little more and set aside.

Beat the egg whites with the mixer until firm. With a fork, transfer the egg whites to a separate bowl.

Put the yolks in the bowl of the mixer with the accessory for the wire. Beat the yogurt, vanilla extract and orange zest and then slowly add the flour mixture on low speed.

Add the olive oil and beat for about a minute to combine. Combine the beaten egg whites with the mariz in 2 batches.

Put the mixture in the oven and bake for 45-55 minutes, until a toothpick comes out clean.

For the icing: beat the ingredients together. Add a few drops of water if needed, to dilute. For the candied oranges: put the orange slices, water and sugar to simmer over medium heat. Then lower and simmer for 15 minutes. Remove with a slotted spoon and leave to cool in oil paste.

When the cake has cooled, turn it over on a cake plate. Spread the candied oranges and the icing on the surface and cut into pieces.
