The Brazilian Cheese World Cup takes place in São Paulo between the 15th and 18th of September. The national award, which includes the participation of artisanal and industrial producers, will be held for the first time in the capital of São Paulo, at Teatro B32, Avenida Faria Lima, 3732, Itaim Bibi.
The event, endorsed by Guilde Internationale, had its first edition in Araxá (MG) a year before the pandemic. More than 950 cheeses were registered and about 33 thousand people participated. In this year’s program, in addition to the cheese and dairy products contest, there will be technical conferences, discussion forums, training courses and harmonized tastings, in addition to the awards for the Best Cheese Maker and the Best Cheese Maker in Brazil.
To accompany all this movement around cheese in the city, the Gastronomic Route of the World Cheese of Brazil was created, a festival that takes place in 15 addresses in the city. The houses will offer dishes, desserts and drinks where artisanal cheese will be the star.
At Carlota, chef Carla Pernambuco created Tarta de queso (R$38), with Fermier cheese from Leiteria Santa Paula, served with kinkans and clove lime compote, as well as a mushroom harumaki with cheese and grilled squid with Tulha cheese.
At Mila, chef Pedro Pineda will serve the Dry Pasta with Chouchou cheese fonduta from Capril do Bosque and guanciale (R$71).
At Casa Tucupi, by chef Amanda Vasconcelos, there is the sun-dried beef croquette with buffalo cheese from Fazenda São Victor, on Marajó Island (R$32).
At LosDos Taqueria, the highlight is the Elote with miso butter, tajin and Cuesta da Pardinho cheese (R$22).
At Laskarina Bouboulina, chef Camila Moura will offer the Marajó Cheese Pide (R$38), which combines cheese from Fazenda São Victor, a mix of organic tomatoes and chermoula, an aromatic sauce made with herbs and spices.
Also participating are Agustín, Carlos Pizza, Confeitaria Marilia Zylbersztajn, Frida & Mina, Le Jazz Brasserie, Mesa III Rotisseria (Sumaré), Preto Cozinha, Quincho, Shuk Falafel & Kebabs and Zestzing Padaria Artesanal.
