Discover 10 new drinks bars opened in SP in the last two years

In recent years, the cocktail scene in São Paulo has gained body, technique and established itself. Now, what is not lacking in the city are counters dedicated to preparing good drinks, in specialized houses or in restaurants, which have also begun to invest in their bars.

For the Italian Fabio la Pietra, ahead of SubAstor, the city has had one of the most exciting growths in the last ten years. “Demand was much more classic. In addition, we sold about 80% less cocktails than today,” he compares, who has been at the bar since 2013.

Michelly Rossi, now from Bar dos Arcos, adds that the cocktail bar not only gained a more technical focus, but also became more professional. “In the past, if the bartender wasn’t available, a waiter would go there and prepare a cocktail. Now, people have specialized and updated.”

As in restaurants, the concern with ingredients has also gained space in bars. More than worrying about the quality of the distilled and fermented products they use, professionals have started to dedicate themselves more and more to the preparation of the inputs used in the recipes.

The result of this evolution appears in international awards —since 2017, bars in São Paulo have been part of the 50 Best Bars ranking— and in the counters that keep appearing in the city. As an option to drink well in São Paulo, there is no shortage of it, discover ten new bars that have opened in the last two years.

Bitter

At Itaim Bibi since April, it proposes to introduce the world of cocktails to those who want to learn to drink and appreciate bitterness. Signed by Gabriel Queiroz and Sylas Rocha, the menu is divided between bitter, striking, fruity and refreshing drinks, in addition to bringing gins-tonics and classics. Prices range from R$29 to R$45 — but the menu warns that those who order recipes like mojito, blood mary and long island will pay R$50 for the drink, because they don’t like to prepare them and charge more. To eat, there are sandwiches and snacks.

caribbean cocktail

From Paraíba, the bartender Marquinhos Felix decided to pay homage to the northeastern region of Cariri at the house, which opened in March. The menu lists 32 drinks, between classics and signature drinks, with prices between R$38 and R$42. A tip is the drink that bears the name of the bar. For R$39, it is made with cachaça, Cynar, red vermouth and celery bitters. The drink earned Felix the title of champion in the 2016 World Class. To eat, there are hamburgers and snacks.

Executioner

Elegant and small, the bar is hidden inside the award-winning Guillotina, in Pinheiros. As with the older brother, who signs the letter there is Spencer Amereno Jr. There are 21 recipes, between classics and authorial, with a single price of R$ 47. All are made by bartender Cris Negreiros, who does not hesitate to suggest recipes to please the clientele’s palate. And, yes, the Carrasco and Guillotina cards are different.

LoHi

Hidden away for six months at Selina, it is open from Tuesday to Saturday until 3 am. Run by the people of Koya88 and Bagaceira —both on JesuÍno Pascoal Street, in Vila Buarque—, it has a signature drink menu that ranges from R$35 to R$45. Another highlight is the food menu, with vegan snacks. japanese. Reservation is recommended.

Nu and Raw

For a year now, it has been serving signature and classic cocktails from Thursday to Sunday inside Casa das Caldeiras, which has a schedule of free parties. Signed by Lula Mascella, the letter indicates whether that recipe is citrus, bitter or has a salty touch, for example. There are 12 drinks, with prices between R$24 and R$36. There are also sandwiches and portions of Sow Burger to eat.

Since September 2021 at Barra Funda, the bartender Gabriel Szklo’s counter has been offering signature drinks at friendly prices, always in pub glasses and featuring cachaça. Prices range from R$24 to R$38. The menu indicates the taste of the drinks, with options such as Flerte Fatal (R$26), with cachaça, Aperol, liqueur, Sicilian lemon, whiskey and Amargo Chuncho. Tip: the bar opens on Mondays.

Santana

Opened in 2020, the first home owned by bartender Gabriel Santana brings a menu with more than one hundred cocktails. While the classics are presented in chronological order, according to the year of creation, the authors are elegant and creative. Prices range from R$35 to R$60, although there is a dry martini option for R$92. It’s another place that opens on Mondays.

Terê

About 350 meters separate the newest bar in Vila Buarque, downtown, from its older brother, Regô. Although it also opens space for wines, the house delves into the universe of cocktails, with seven signature drinks, in addition to 16 classics, with prices starting from R$30 and reaching R$80. of 60 recipes. Luiz Mascella is the one who signs the letter from both addresses.

The Punch

Ricardo Miyazaki’s Japanese-style drinks bar is elegant and understated. Inside a gallery close to Avenida Paulista, the place asks customers to make reservations, with arrival and departure times. The objective is to prioritize hospitality and service. The extensive menu is divided into cocktails based on whiskey, gin, rum, tequila and cachaça, with prices starting at R$45.

I bring

Bartenders Fabio Mec and Ciro Tupinambá chose Barra Funda to set up their first counter of their own, in September 2020. The menu is divided between classics, reinterpretations, authorials and gin and tonics, with prices ranging from R$27 to R$35. Recently , the house got a more relaxed sibling, Es.Trago, across the street.
