These soft molasses cookies are all you need to slowly get into the Christmas mood. You will only need 40 minutes for about 24 cookies.
What you will need:
- 2 cups (250 g) all-purpose flour
- 2 teaspoons of baking soda
- 1 teaspoon of cinnamon
- 1 teaspoon of ginger
- ½ teaspoon ground cloves
- ¼ teaspoon salt
- Pinch of cardamom (optional)
- ½ cup (113 g) unsalted butter, melted and cooled
- ⅓ cup (67 g) granulated sugar
- ¼ cup (50 g) brown sugar
- 1 large egg
- ⅓ cup (80 ml) molasses
- ¼ cup (50 g) granulated sugar, for cookies
How to make it:
- Preheat your oven to 180 degrees. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, and cardamom. Put them aside.
- In a large bowl, beat the melted butter, granulated sugar, brown sugar, egg, and molasses with a stand mixer on medium-medium-high speed until fluffy and well combined – about 2 minutes. It should turn a lighter brown and have the color and texture of smooth peanut butter.
- With the mixer running on the lowest speed, slowly add the flour mixture a little at a time to the molasses mixture. Do not overbeat the mixture.
- Put the granulated sugar in a bowl or on a plate. Use a tablespoon to measure to make the same size cookies, then make a small ball with your hands. Roll it in the sugar until it is covered and put it on the baking tray lined with non-stick paper. Repeat with the rest of the dough, keeping a distance between them, about 3-4 cm.
- Bake for 8-10 minutes, until the cookies have risen and spread. Let them cool and enjoy.
