Soft Molasses Cookies – In 40 minutes you will have them on your plate…

These soft molasses cookies are all you need to slowly get into the Christmas mood. You will only need 40 minutes for about 24 cookies.

What you will need:

  • 2 cups (250 g) all-purpose flour
  • 2 teaspoons of baking soda
  • 1 teaspoon of cinnamon
  • 1 teaspoon of ginger
  • ½ teaspoon ground cloves
  • ¼ teaspoon salt
  • Pinch of cardamom (optional)
  • ½ cup (113 g) unsalted butter, melted and cooled
  • ⅓ cup (67 g) granulated sugar
  • ¼ cup (50 g) brown sugar
  • 1 large egg
  • ⅓ cup (80 ml) molasses
  • ¼ cup (50 g) granulated sugar, for cookies

How to make it:

  1. Preheat your oven to 180 degrees. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, and cardamom. Put them aside.
  2. In a large bowl, beat the melted butter, granulated sugar, brown sugar, egg, and molasses with a stand mixer on medium-medium-high speed until fluffy and well combined – about 2 minutes. It should turn a lighter brown and have the color and texture of smooth peanut butter.
  3. With the mixer running on the lowest speed, slowly add the flour mixture a little at a time to the molasses mixture. Do not overbeat the mixture.
  4. Put the granulated sugar in a bowl or on a plate. Use a tablespoon to measure to make the same size cookies, then make a small ball with your hands. Roll it in the sugar until it is covered and put it on the baking tray lined with non-stick paper. Repeat with the rest of the dough, keeping a distance between them, about 3-4 cm.
  5. Bake for 8-10 minutes, until the cookies have risen and spread. Let them cool and enjoy.
