Mushrooms stuffed with quinoa and vegetables – The appetizer you will love…

A delicious appetizer, which your company and small children will love

An appetizer for a large or small group, which you can prepare much earlier and bake at the last minute. So everyone enjoys the delicious melted cheese with its strings!

Ingredients for 25 mushrooms:

  • 25 white mushrooms
  • 1 Florina pepper in small squares
  • 1 small yellow pepper
  • 6 slices of bacon in small squares
  • 1/2 cup quinoa
  • 1/2 bunch of chopped parsley
  • 50 g grated gruyere
  • 50 g grated mozzarella
  • 60-70 g grated yellow cheddar
  • a few leaves of fresh oregano (or dried)
  • a little olive oil
  • salt and freshly ground pepper

How to make it:

  1. Remove the stems from the mushrooms and peel them. Chop the stalks.
  2. Place the mushrooms in a baking tray with parchment paper and sprinkle with oregano leaves, salt, pepper and a little olive oil. Bake in a preheated oven at 170°C, air, for 12′. At 8′, remove the water that has collected and put it in a bowl (we will need it). After 12 minutes, remove from the oven and remove the excess water, if any.
  3. Prepare the quinoa according to the instructions on the package. To the water that will be needed, add the mushroom water for extra flavor. In a hot non-stick pan, add the bacon and the stalks. Sauté on medium heat for 3-4′ and add the quinoa, peppers and freshly ground pepper. Leave for another 6-7′ and add the parsley and gruyere. Taste and adjust the spices.
  4. Stuff the mushrooms and place the grated cheeses on top.
  5. Grill in the oven, not too high, until the cheeses are melted and a few bubbles appear. Alternatively, let them cool completely and cover with cling film. Store in the fridge until needed. Before baking, let them come to room temperature.
