Clafoutis with zucchini, mizithra and sun-dried cherry tomatoes – Ready in 45 minutes!

Soft and almost creamy in the middle, fluffy like “yours” at the edges. Fresh myzithra along with herbs and dried cherry tomatoes combine beautifully with zucchini to make every bite special

With a few ingredients, easily and within 45′ you can have a very special meal.

Materials:

  • 2 eggs
  • 150 ml of milk
  • 80 g of flour
  • 60-80 ml olive oil
  • salt and pepper
  • 2 medium zucchinis
  • 100 g of mizithra or other soft cheese
  • fresh basil, chopped
  • chopped parsley
  • some sun-dried cherry tomatoes (dried or in oil)
  • a little olive oil
  • some gruyere or parmesan (at the end, on top)

How to make it:

  1. Cut the zucchini into strips and put them on the grill for 4-5 minutes on one side only.
  2. Prepare the egg mixture and set aside. Mix the filling ingredients and wrap the zucchini.
  3. Place in a pan (with parchment paper or oiled). Finally pour the mixture carefully and bake in a preheated oven at 180°C for about 35′.
  4. 10′ before the end, open the oven and sprinkle with a little olive oil and grated Gruyere.
  5. Leave for 10′ after it comes out of the oven and serve!
