Opinion – Barbecue nation: Grilled salmon with orange butter with herbs

For this summer I prepared fresh and light recipes made on the grill to share with you, but where’s the summer?

São Pedro isn’t helping, the rain forecast for next week is still here in SP, and if it’s in your region too, we’re in the same boat.

To bring warmth, how about preparing this salmon full of flavor? And if you don’t feel like preparing it on the grill, you can do it in the oven.

This fish is popular with Brazilians and is great for grilling, as it has a thick streak of fat. It is rich in protein, omega-3, vitamin B12 and vitamin D. In addition, it is a great source of minerals such as selenium and phosphorus.

And this orange butter adds a citrus touch to our barbecue, it goes perfectly with the fresh herbs and goes very well with any type of fish and chicken.

I beg you: do not cook the salmon on the coals. Fish are delicate meats and when it gets past the point it becomes dry and looks like sawdust when eating. To know if it’s on point, use your index finger and try to take a splinter; if it comes out effortlessly, you’re in the right spot. Now, if it’s past the point, the meat will be tough, and if it hasn’t roasted enough, the splinter won’t come out.


Herbed Orange Butter Salmon

(Makes four servings)

INGREDIENTS

1 salmon fillet weighing 700g

50g butter at room temperature

zest of 1 orange

Juice of 1 orange

1 tablespoon thyme

Salt and black pepper to taste

3 tablespoons of olive oil

PREPARATION

  1. Prepare the butter with orange zest, orange juice, thyme, salt and black pepper.
  2. Season the salmon with olive oil, salt and black pepper.
  3. Take the skin part to the grill first and leave it for approximately 10 minutes over medium heat, until the skin is crispy. Then brown the other side for about 5 minutes, but over high heat.
  4. Remove from the heat and add the orange butter.
  5. To make it in the oven, use roasting pans that have a grill, as the heat will pass through the skin and meat.
  6. Preheat the oven for 10 minutes at maximum temperature and take the salmon to bake.

Ready in 25-30 minutes.
