The salad with courgettes and grilled halloumi, pine nuts, capers and parsley is, perhaps, something you have not tried before
What you will need:
- 2 tablespoons of chopped onion
- salt
- pepper
- 1/4 teaspoon red pepper flakes
- 2 spoons of olive oil
- 1 tablespoon of lemon juice
- 1 spoon of vinegar
- 1 1/2 kilos of zucchini
- 1 cup chopped parsley
- 3 spoons of capers
- 2 spoons of pine nuts
- 250 g cubed halloumi
How to make it:
- In a small bowl, put the onion, some salt and pepper, red pepper, olive oil and lemon juice. Work it with a fork and add the vinegar and continue to work some more until it becomes creamy. Alternatively, use a blender.
- In a large bowl, add the sliced ​​zucchini, parsley and capers. Put the pine nuts in a non-stick pan, at a medium-low temperature, and roast them until golden. Toss the pine nuts into the bowl with the zucchini and parsley.
- In the same pan and at a medium-high temperature, saute the diced halloumi for 2-3 minutes or until golden brown on all sides. Add the halloumi to the salad bowl, drizzle with the dressing little by little until it’s the way you want it. Serve ideally while the halloumi is hot.
