To serve, spread the dressing on the plates and top with a piece of salmon
For the following recipe you will need two salmon fillets, spices, honey and avocado. In addition, you can make a cool salsa with pineapple and cucumber and have a dish rich in ω-3, aromas and flavors.
What you will need for 2 servings:
- 2 salmon fillets
- honey
- salt
for the spice mix:
- 1 teaspoon each ground cumin, coriander and brown sugar
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ¼-½ teaspoon hot chili powder
for the sauce:
- 1 avocado, cut in half
- 2 tablespoons each of cream and yogurt
- ¼ cup each coriander and parsley leaves, coarsely chopped
- 1 tablespoon pickled jalapenos
- 2 tablespoons “juice” from pickled jalapeños
- 1 teaspoon ground cumin
- sea salt and ground pepper
for the salsa:
- 1 cup diced pineapple
- ¼ cup diced cucumber
- 1 tablespoon chopped red onion
- 2 teaspoons chopped red chili
- lime juice, a little olive oil and salt
- fresh dill for garnish, optional
How to make it:
- For the dressing: Blend all the ingredients in a food processor until smooth. Season with salt and pepper.
- Put all the spices together in a bowl.
- Preheat the grill.
- Place the salmon in a pan with a little oil and sprinkle with the spices. Season with salt and pepper and pour over the honey.
- Place the salmon in the bottom third of the oven and bake for about 5 minutes until the top is golden brown and the salmon is cooked to our liking. Set aside to rest for 5 minutes.
- For the salsa: Mix the first ingredients in a bowl and add the lime juice, a little olive oil and salt.
- To serve, spread the dressing on the plates and top with a piece of salmon. Pour over a spoonful of salsa and garnish with dill if desired.
