Simply and quickly (in about 45 minutes) we make a food that our loved ones will ask for again and again.

Ingredients for 4 people:

  • 1.5 kg chicken in pieces
  • 1 finely chopped onion
  • 2-3 cloves of garlic
  • 1/4 tsp white wine
  • 2 tbsp coarse barley
  • 700-800 g stock or water
  • 60-70 g gruyere or parmesan
  • 1/2 bunch basil
  • salt and freshly ground pepper
  • olive oil

How to make it:

  1. Season the chicken and saute, over high heat, until it gets colored on all sides. About 5-7′.
  2. Remove the chicken, add a little olive oil and saute the onion with the garlic for 5-6′ on medium to low heat. Deglaze with the wine and let it evaporate by half.
  3. Add the barley, mix and let it heat up for 2-3 minutes.
  4. Place the chicken pieces on top of the barley and add the hot broth (we want the pasta to be completely covered). Increase the heat to start boiling. Lower the heat again, cover and simmer for 10′. Shake the pan every now and then.
  5. After the time is up, add the lemon juice, zest, basil and gruyere. Mix and leave for 3 more minutes.
  6. Leave for 5′ off the heat and serve with extra cheese and basil.
