What the title says…
This chocolate cake is not difficult at all. You will bake two small cakes, make two frostings and assemble them. The ingredients are common and easy and in almost an hour you will have the most Instagram worthy cake you have ever made.
What you will need:
- 3 large eggs, at room temperature
- 1 cup + 2 tablespoons buttermilk, at room temperature
- 1/4 cup + 2 spoons yogurt
- 3/4 cup coconut oil or seed oil
- 1 tablespoon of vanilla extract
- 2 1/4 cups all-purpose flour
- 2 1/4 cups sugar
- 1 1/2 cups cocoa
- 2 1/4 teaspoons baking soda
- 2 1/4 teaspoons of baking powder
- 1 1/2 teaspoons salt
- 1 cup + 2 spoons hot French/espresso coffee
peanut butter frosting:
- 1 1/2 cups peanut butter
- 1/2 cup salted butter, at room temperature
- 2 cups of powdered sugar
- 2 teaspoons of vanilla extract
chocolate frosting:
- 1 cup salted butter, at room temperature
- 2 cups of powdered sugar
- 1/2 cup cocoa powder
- 2 teaspoons of vanilla extract
- 1/4 cup cream, at room temperature
How to make it:
- Preheat the oven to 180 degrees. Grease two 8-inch round pans. Lay a non-stick paper on the bottom of them.
- In the bowl of a stand mixer, beat together the eggs, buttermilk, yogurt, oil and vanilla until well combined. Add the flour, sugar, cocoa, soda, baking powder and salt. Mix until well combined. Then slowly pour in the hot coffee, stirring.
- Put in the pans and bake for 20 to 25 minutes. Let them cool and then take them out of the pan. To create the “dirt” look on the “pumpkin patch”, simply take a serrated bread knife and cut off the top rounded part of each cake layer. If you prefer not to have an extra step – skip it.
- To make the peanut butter frosting, put the peanut butter, butter, powdered sugar and vanilla in a bowl and beat well.
- To make the chocolate frosting, add the butter, powdered sugar, cocoa powder and vanilla to a bowl. Beat and then add the cream and beat for another 1-2 minutes, until light and fluffy.
- To assemble, place one cake layer on a cake stand. Spread half the peanut butter over the cake. Add the 2nd cake layer and spread with the remaining peanut butter. Add the final cake layer and cover with the chocolate frosting. Decorate as you like with cake crumbs or macarons. Put for 1 hour in the fridge and then serve.
