If there was a prize for ingenuity for what dessert you can make in small quantities and with various invalid ingredients you have at home, then it would rightfully be mine. So in my world, where sweets play such an important role, I can’t even fathom people saying they don’t want sweets or even worse that they don’t like sweets!

From my perspective, you simply cannot deprive yourself of something that our brains are literally programmed to enjoy. This is due to biology. But that’s not why I always have snickers bars or caramel ice cream at home. Since we have to have a balanced diet and not skip meals, so I never skip dessert (Ha!). But since the portions in the dessert recipes are aimed at several servings and several people, I made sure to collect some recipes that can be made by one person, making only one serving, so that you can enjoy your creation on the spot.

  • Chocolate Chip Brownie Cookies

For this dream giant cookie you will need:

  • 1 large banana, mashed
  • 1 egg
  • 1 tablespoon melted coconut oil
  • 1 tablespoon creamy nut butter

Vanilla extract

  • 1 tablespoon of coconut sugar
  • 1/4 cup + 2 tablespoons gluten-free all-purpose flour (or oat flour)
  • 1 tablespoon of cocoa powder
  • 2 servings Protein (optional)
  • 1/2 teaspoon baking powder

Dark chocolate pieces

After gathering the ingredients, follow the instructions below: Preheat the oven to 200 degrees and line a baking tray with parchment paper. In a bowl, whisk together the egg, oil, nut butter and vanilla until creamy. Then mix in the coconut sugar, flour, cocoa, protein and baking powder until it becomes a uniform mixture. Break up the chocolate pieces and form a large cookie in the pan. Bake in the oven for 10-15 minutes and enjoy! For extra enjoyment, you can sprinkle with coarse salt.

  • French Toast in a Mug

For a quick french toast that you will enjoy in your favorite mug, you need the following ingredients:

  • 1 teaspoon of butter
  • 3 tablespoons of milk
  • 1 teaspoon maple syrup
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1 pinch of nutmeg
  • 1 large egg
  • 1 cup bread crumbs
  • Fruit of your choice

The process is simple: Place the butter in a large bowl and microwave for 15-20 seconds or until melted. Add the milk, maple syrup, cinnamon, vanilla, nutmeg and egg to the mug and whisk until combined. Add the bread pieces to the mug and mix gently until all the pieces are soaked in the egg and milk mixture. Let the bread sit and absorb the liquid for about 1 minute. Place the mug in the microwave for 60-90 seconds or until the mixture is solid. Serve immediately garnished with your favorite ingredients.

  • Cinnamon Roll

Who does not love cinnamon rolls and especially when they are warm and fluffy? If you urgently need something sweet, and specifically a one-serving dessert, for the delicious cinnamon roll, you will need the following ingredients:

  • 1/4 cup self-raising flour
  • 3 tablespoons of yogurt of your choice
  • 1 spray of cooking spray or coconut oil or butter
  • 2 tablespoons of sweetener of your choice
  • 2 teaspoons of cinnamon
  • 1 tablespoon of powdered sugar

The process is very easy: Preheat the oven to 180C. Line a tray or tray with parchment paper and set aside. In a bowl, add the flour with the yogurt and mix well. Then, using your hands, form a ball of dough.

  1. Lightly flour a surface to roll out the dough. Add some flour to the dough and place it on the floured surface. Form the dough into a rectangle and, using a rolling pin, roll it out so that it is not too thin. Spray one side of the dough with cooking spray. Sprinkle with cinnamon and sugar. From the short end of the dough, slowly roll it up.
  2. Place the cinnamon roll on the pan or plate you have lined. Press it down and brush it with water, milk or oil. Bake for 15-17 minutes or until the surface is golden brown. Remove from the oven and let cool for 5 minutes before adding the frosting. To prepare the icing, mix powdered sugar with milk, yogurt or water until you reach the desired consistency.
