Marie SIMON, awarded the title of “world champion of sweet arts (Mondial Des Arts Sucrés, 2018) under the guidance of Lilian Bonnefoi and Thierry Bamas and has run a patisserie in the heart of the city of Bonn, where she had the pleasure of sharing her creations.

Today, at the head of her own company, she divides her time between pastry making for professionals and individuals, but also as pastry chef at the two-Michelin-awarded restaurant L’Amaryllis in Saint-Remy.

A few words about Pastry Chef

Passionate about her work, Marie Simon owes her love of discipline to her grandmother who introduced her to the joy of sharing and relaxing moments, “long afternoons” making crisp apple pies and soft chocolate cakes.

So it was only natural for Marie to turn to pastry studies.

During her years at Notre Dame de la Providence Vocational School of Orchies, she won the title of best apprentice of Nord Pas-de-Calais.

A trophy that allowed him to reach the final of the competition of the best apprentice of France the following year.

Specializing in the preparation of sweets and in particular a vocational diploma in baking and pastry making, Marie the “young prodigy” of her field, trained in prestigious facilities with big names in the pastry industry.

This experience allowed her to meet inspiring professionals such as Benoît Couvrand and Nicolas Paciello.

After a year at the Hotel Burgundy, where she discovered haute patisserie, Marie Simon worked for 5 years with Lilian Bonnefoi at the Hôtel du Cap-Eden-Roc in Antibes in the summer seasons and then in the winter at Apogée and K2 Palace in Courchevel .

With these experiences, Marie tried and won the Mondial des Arts Sucrés in 2018, supervised by Lilian Bonnefoi and Thierry
Bamas – Meilleur Ouvrier de France Pâtissier, who helped her perfect her technique.

Her heart then led her to follow her partner to Burgundy, where she took the position of pastry chef in a 3-star restaurant.

In later years she became the manager of a pastry shop in the heart of the city of Beaune where she had the pleasure of sharing her creations and the dessert making philosophy that characterizes her.

Today, head of her own company, she divides her time between personalized pastry creations for professionals, individual orders but also her position as pastry chef for the 2-star restaurant: L’Amaryllis in St Rémy (71).
