These bars are just the right amount of sweet and soft that will make you forget they don’t have any trace of sugar or gluten. Try the recipe with or without the glaze.

What you will need:

  • 1 1/2 fl. almond flour
  • 1/4 fl. maple sugar
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3 eggs
  • 2 tablespoons butter, softened
  • 1 1/2 fl. carrots, grated
  • 1/2 fl. desiccated coconut, chopped

For the cream cheese:

  • 8 teaspoons cream cheese, soft
  • 3 tablespoons butter, softened
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon of lemon juice

How to make it:

  • Preheat the oven to 175°C. Line a square pan with parchment paper.
  • Put the almond flour, maple sugar, cinnamon, ginger powder, salt and baking soda in a bowl. Put the eggs and butter in a separate bowl.
  • Combine the wet ingredients with the solid ingredients and mix well. Add the carrot and coconut.
  • Pour the mixture into the pan and bake for 25 to 30 minutes or until a toothpick comes out clean.

The cream cheese

  • Place the cream cheese and butter in a large mixing bowl and beat until smooth and creamy.
  • Add the maple syrup, vanilla extract, salt and lemon juice. Mix well to combine.
  • Spread over carrot cake and enjoy.
