The ideal breakfast with vegetables, eggs and turkey, a proposal full of flavor and a perfect idea for brunch
What you will need:
- 1 tablespoon of olive oil
- 1 large sweet potato cut into ¼ rounds
- 1 full cup turkey, shredded
- 1 cup diced onion
- 1 cup bell pepper, diced
- 2 cups of spinach
- 1 teaspoon of garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- 8 eggs
How are you going to make it?
- Preheat your oven to 200 degrees and grease a square pan with 1 teaspoon of olive oil.
- Layer the sweet potatoes with 1 teaspoon of olive oil and salt in the bottom of your pot. Bake for 30 minutes.
- While the potatoes are in the oven, in a large skillet over medium-high heat, add the remaining 1 teaspoon of olive oil and sauté the turkey for 1 minute. Add the peppers, onions and spinach and sauté until slightly softened. For about 2 minutes. Add the spices and mix. In a medium bowl, crack 8 eggs and beat well. Take your potatoes out of the oven and reduce the oven temperature to 180 degrees.
- Pour the vegetables with the turkey over the sweet potatoes and then the egg mixture.
- Bake for 25-30 minutes or until a knife inserted in the center comes out clean. Let cool for 5-10 minutes before serving.
