What you will need:

  • 1 tablespoon of olive oil
  • 1 large sweet potato cut into ¼ rounds
  • 1 full cup turkey, shredded
  • 1 cup diced onion
  • 1 cup bell pepper, diced
  • 2 cups of spinach
  • 1 teaspoon of garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 8 eggs

How are you going to make it?

  1. Preheat your oven to 200 degrees and grease a square pan with 1 teaspoon of olive oil.
  2. Layer the sweet potatoes with 1 teaspoon of olive oil and salt in the bottom of your pot. Bake for 30 minutes.
  3. While the potatoes are in the oven, in a large skillet over medium-high heat, add the remaining 1 teaspoon of olive oil and sauté the turkey for 1 minute. Add the peppers, onions and spinach and sauté until slightly softened. For about 2 minutes. Add the spices and mix. In a medium bowl, crack 8 eggs and beat well. Take your potatoes out of the oven and reduce the oven temperature to 180 degrees.
  4. Pour the vegetables with the turkey over the sweet potatoes and then the egg mixture.
  5. Bake for 25-30 minutes or until a knife inserted in the center comes out clean. Let cool for 5-10 minutes before serving.
