The brand new, renewed menu of the leading Greek restaurant raises expectations to unimaginable heights and aims for the highest possible distinction
Approaching 3 years of operation, an anniversary that will be completed in July 2024, the award-winning DELTA RESTAURANTthe only one in Greece with 2 Michelin stars and a green Michelin star for the sustainable gastronomy it offers, is radically renewing its menu with the aim of conquering new peaks and why not, the third Michelin star.
Despite its relatively short presence, as it opened its doors in July 2021, the DELTA team does not rest, it does not become complacent, but seeking to conquer the top through a philosophy of continuous renewal, it invests in continuous improvement that this time as well , is spectacular.
The bold new menu took hundreds of man-hours of preparation and testing, and the result vindicates the hard work of the entire team. A menu that broadens its horizons and puts Spain, France, Scandinavia and Greece at the same table, in a genius, imaginative but also painstaking way. Cooking techniques from Spain and France, preparations and fermentations from Scandinavia, raw materials from Greece. Cosmopolitanism that contains substance, experimentation that pays off, sustainability that is possible, localism that bridges distances. Next to them, there is the avoidance of food waste and the utilization of every material to the maximum, the farm to table philosophy and organic products, the fermentation that represents a large part of the preparations.
At the most mature moment of his career, Giorgos Papazacharias is inspired by his well-traveled life, his love for Nature, his moral principles and the Greek tradition, presenting his influences in a completely personal way that neither copies nor is copied. A new proposal for which the chef notes with emphasis:

The renewed proposals retain their enigmatic character, but also the established Omnivore, Vegetarian or Vegan orientation, depending on the preferences of each customer. Apart from the new arrivals on the menu, some emblematic signature dishes will remain, after first undergoing a radical renewal process, at a later date.
The culinary match at the zenith of pleasure is ensured by the wine list of Telemachos Papandreas, with over 1000 labels from international and Greek vineyards.

Delta Restaurant was created by the Deipnosophistiorion in July 2021, with the initiative and donation of the Stavros Niarchos Foundation (SNF) and the aim of becoming a model culinary destination worthy of the high standards of the Stavros Niarchos Foundation Cultural Center (SNFCC), while highlighting Greek cuisine worldwide. It is the only restaurant in Greece with 2 Michelin stars – an award it received in the years 2022 and 2023 – while it also has a Green Star for Sustainable Gastronomy and important distinctions for the architecture of the bar and its interior design.
