A fish with the taste of vanilla, skewers on “charcoals” made of sugar paste, a box of mocha-flavored sneakers, black forest hookahs, Lefkos Pyrgos with the taste of peanuts and a subway of Thessaloniki full of sweetness are just some of the creations of Thessaloniki engineer Yannis Marini, who combines his knowledge of construction and building statics with confectionery.

Even if the pillars on the cakes are not … iron, his knowledge is useful for his three-dimensional sweet constructions, which stand tall! Giannis Marinis transferred his experiences from the construction site to the confectionery workshop and the cakes that have the shape of a building or are large in volume, do not fall at all, as they were edited by the most expert in study and construction.

“Of course I do a study first, because it is true that the engineer still exists in me and I have him as a permanent advisor! My studies helped me because it is not only the idea for a cake, but mainly its construction” explains, speaking to the Athenian/Macedonian News Agency, Yannis Marinis, who is professionally involved in confectionery, which finally won him a relationship with engineering.

“In many cases I create ‘beams’ to support the cake and use special compositions to support the sweet construction. There were cases when it took several hours of study so that our cake wouldn’t fall,” he says, revealing his slogan: “if I could beat gravity I’d become an astronaut, not a confectioner!”

APE-MPE met Mr. Marinis in his workshop, in Panagia Faneromeni, Thessaloniki. There, with his brother Stamatis, who mainly deals with the executive part, they put the final touches on a …chocolate base. Fish, shells, seaweed and even the different shades of water at the bottom have been captured with pastry materials. The result is so beautiful that, seeing it, one would probably think that it is a decoration and not a cake.

“We have orders for openings, children’s/adult parties and other events. Big stores and companies ask us to make whole constructions, like for example their factory in the form of chocolate. In a company with construction materials, we made all the tools, while we have definitely made the sweetest subway model, with lots of sugar and stops made of chocolate” says Mr. Marinis.

As the two brothers say, salty edibles are also in great demand, but in their sweet version. Skewers on the grill and burgers with the detail of melted cheese or egg, are just some of the creations that have won impressions and at the same time the most comments on social networks, with their photos being scanned.

The history of Marini confectioneries begins about 65 years ago. Their mother, Aleka Marini, started working and learning the art of pastry making in the most famous and renowned pastry shops of the time: Floka, Makridis, Achillea, etc.

After the idea matured, she and her brothers decided to create a store in 1975 with their own stamp, wanting to fully express their philosophy. In 1996, they opened a second shop, now owned by her children, Stamatis and Yiannis, who attended seminars and managed to develop confectionery, having in fact many entries and distinctions in competitions and already counting 11 prizes in pan-Hellenic artistic confectionery competitions, as well as a international award in Croatia.
