Discover trendy sweets like crookie, brookie and cruffin

Crookie, brookie, cruffin, supreme and flat croissant seem like terms taken from a tongue twister. But they are, in fact, the names of sweets that fill the windows of stores in the capital of São Paulo, driven by their success on social media.

The latest additions to the list of viral treats — which originated mainly outside the country — are the crookie (a combination of a croissant and a cookie) and the flat (a flattened croissant with a thin layer of sugar). Both have been available in the city in recent months.

But the lineage of hybrid sweets began in 2013, with the cronut, a mix between a croissant and a donut. The result is a kind of round cake made up of layers of puff pastry and filling, fried and finished with sugar.

The invention was created by American chef Dominique Ansel, who saw lines forming around his bakery in New York, USA. For pastry chef Otávia Sommavilla, author of the book series “Enciclopédia dos Bolos” (ed. Melhoramentos), the great thing about this creation is that, even though it is fried, it manages to have the lightness of a croissant.

Although hybrids are a recent creation, the use of croissant puff pastry — quite common in these new products — in various recipes is not uncommon. “According to historians, the first records of the use of puff pastry come from the region of present-day Turkey. If we think about it, there are many Arabic sweets that are puff pastry. But the croissant only arrived in France in the 19th century. In a way, it is a pastry that allows for creativity,” explains Sommavilla.

“I think that confectioners have realized that these combinations generate curiosity in people and great commercial successes. Some, in my opinion, are too much,” says the confectioner.

To avoid being left guessing, the Folha Guide team tried out some of the sweet treats that have gone viral on the internet. They selected five hybrids, with and without croissants in the middle, that are frequently seen on Instagram and TikTok. In addition to these, an old favorite, the pan cookie, made the list.

Brookie

The combination of brownie and cookie has been around for about a year and can be found at Cookie Mania. In the classic version (R$15.90), which has a chocolate flavor and no filling, you can taste the textures of the two original sweets. On top, there is the cookie, which gives it a crunch; on the bottom, the brownie, which gives it a softness. It is a good suggestion for those with a sweeter palate.

Pan Cookie

The name gives you a good idea of ​​what this sweet treat is: a mix between a cookie and a brigadeiro. Boldy Cookies comes in four flavors (starting at R$20): gourmet brigadeiro, semisweet, Ninho with Nutella and pistachio. It looks like a chocolate chip cookie, but when you dip the spoon into the aluminum container, the filling appears — maintaining the cookie’s crunchy texture. Despite the brigadeiro, it doesn’t overdo the sugar.

Crocookie

Created by chef Stéphane Louvard in 2022 in Paris, it has only recently been sold in São Paulo. The treat consists of a croissant with a cookie filling and on top. In the American Cookies options, Nutella flavor (R$30), and Ofner (R$19.9), vanilla flavor with chocolate chips and chocolate ganache, the croissant and the cookie did not integrate well with each other. In addition, the textures of the two original sweets are lost. The result is a product recommended for those who like strong sweet flavors. The biggest difficulty is when biting into it: due to its size, it does not fit well in the mouth.

Cruffin

The recipe, made with the puff pastry of the croissant, is baked in a muffin tin and filled with various flavors, such as caramel with fleur de sel, found in Mintchi Croissant (R$23). Light, airy and with a filling proportional to the dough, the cruffin also had a crispy surface on the outside and did not collapse when cut. The size is ideal for one person to eat alone.

Flat Croissant

A trend in South Korea since last year, it consists of a croissant dough pressed to the approximate thickness of a biscuit, which is flattened before or after it is ready, baked or even fried. It has a crunchy result, with a thin layer of sugar, reminiscent of a palmier. We Coffee’s version features the treat covered in white and milk chocolate (R$16 each), the latter being sweeter. Although the result is pleasing, it does not resemble the texture of a croissant at all.

Supreme Croissant

The sweet treat, which reached its peak in popularity in 2023, is made with the puff pastry of a croissant, compressed and presented in a circle shape — hence the name croissant roll and NY roll. The one from Levena bakery comes in dulce de leche and chocolate flavor (R$25). With a very well-filled center, it resembles a volcano cake. The creation still divides opinions. Those who don’t like it say that the original texture of the croissant is lost.
