On Women’s Day, discover 5 new bars run by barmaids in São Paulo

Although the cocktail universe is still dominated by men, those who go out at night in São Paulo see more and more women running the cocktail shakers behind the counters, whether preparing classic recipes or signing creations.

In recent months, the capital has received a wave of new addresses that bet on drinks menus with increasingly sophisticated recipes – many under the baton of barmaids, as the female bartender is called.

This recent wave of openings has names like Ana Paula Ulrich, from Rabo di Galo, and Bianca Lima, from Boato. They are joined by renowned professionals, such as Michelly Rossi, currently at Bar dos Arcos, and Stephanie Marinkovic, from Espaço 13 – just to name a few.

To celebrate Women’s Day this Tuesday, the 8th, discover five new bars in São Paulo run by them. And remember: if you’re going out to visit any of the addresses below, just lower your mask when drinking.

Rumor

Since December, at the corner of Pedroso Alvarenga and Pais de Araújo streets, the business has brought the barmaid Bianca Lima to head the counter. Current champion of the Brazilian stage of the World Class, one of the biggest cocktail tournaments in the world, Lima presents creations such as Meia Verdade — with whiskey, lady gray tea, sage, bitters and enoki mushroom (R$ 35). The menu also includes a spritzes section, a gin and tonic section, a mule section and a classic section.

Flora
Hidden behind a flower shop since October, the bar is run by Adriana Pino, an award-winning bartender with more than 15 years of career and a partner in the house. The menu bets on historic drinks, which are presented through a timeline – it starts in 1838 with sazerac and ends in 2014 with macunaíma. But there are also three creations by Pino. This is the case of Cauliflora, which brings cachaça, vodka, jabuticaba nectar, Sicilian lemon, club soda and cumaru zest.

Gran Bar Bernacca

Opened in October, the house is the sister of Bottega Bernacca, an Italian restaurant with three units in São Paulo — and is next door to the Itaim Bibi address. As a good youngest, the bar has a more relaxed and youthful atmosphere than the restaurant. The person in charge of drinks there is Ana Gumieri, who has worked at Side Bar and Lupe. In the menu, the selection of classics shares space with creations such as Alado, made with Campari, vermouth, pisco, artisanal bitters, cumaru and saline soju solution (R$ 36).

Rooster’s tail

Despite bearing the name of a classic of dirty feet, our “cocktail”, the bar is part of the luxurious Rosewood hotel, opened in December within the Cidade Matarazzo complex. In charge of the house cocktail shakers is Ana Paula Ulrich, who has worked at another hotel bar, Burle, at Palácio Tangará, and was a finalist in the Global Patrón Perfectionists 2020 championship. Among the creations are the fruity Wishbone, made with gin, Lillet, mango, Luxardo Bitter Bianco, Sauternes and Angostura (R$65).

Miss Saigon

The Vietnamese restaurant opened in September in Pinheiros — before, the house was in Moema. The counter works under the guidance of Estela Nakanishi, who signs the letter with manager Erison Fialho. Among the creations are Kon Tun, made with vodka, violet syrup, dehydrated hibiscus and lemon soda (R$46), and Da Nang, with Sicilian lemon gin, pink lemonade tonic, grapefruit, rosemary and juniper.
