Researchers in South Korea, according to CNN, claim to have developed a new way to create meat in lab conditions that not only has the nutrients of meat but also tastes like it. It may look like bubble gum-jelly in pink color but it is a revolution in the “meat” we eat.

While previous studies had succeeded in mimicking the look and nutritional value of meat, they had failed to achieve the taste. According to the new study, however, published in the journal Nature Communications, the researchers succeeded in making lab-grown meat taste like roast beef.

“Taste is the most important step in making something grown in a lab look like real meat,” Milae Lee, co-author of the paper and a doctoral student in the Department of Chemical and Biomolecular Engineering at Yonsei University in Seoul, told CNN.

Because cultured meat is not yet edible, the researchers used an electronic nose, which “mimics the human nasal system,” Lee said, to test the aromas of lab-grown meat and see how it compares to conventional meat. meat.

The researchers plan to reduce the animal products used in the process, including the gelatin-based hydrogel, to work toward a lab-grown meat almost entirely free of animal-derived substances.

Livestock farming is responsible for 6.2 billion metric tons of carbon dioxide entering the atmosphere each year, according to UN figures. This is about 12% of all human-caused emissions. With this new discovery, researchers hope to reduce carbon emissions caused by livestock farming.
