Neratzias – also known as “Seville oranges” have blossomed everywhere, intoxicating people with their aroma. Glyko Neratzi is the perfect solution to “exploit” the fruits of this tree, even those hanging from the public neratzis in the neighborhoods of Athens.

Traditionally, spoon sweets are served in glass saucers accompanied by a cup of Greek coffee!

Ingredients – For 32 pieces

– 8 large oranges
– 1 kilo of sugar
– 3 cups of water
– juice of a medium lemon

Implementation

– Wash the oranges and dry them. Grate them with the fine cheese grater to remove a large part of the rind. We take care not to rub it all to preserve the wonderful aroma of the fruit.

– Cut a little off the top and bottom of the fruit, cut each one vertically into 4 parts and carefully remove the flesh. So we have 32 peels (pieces).

– We roll the peels into small rolls (spools) that we pass through with a needle and thread and make necklaces so that they do not open.

– Put the rolls in a bowl and cover them with cold water. Leave them overnight and change the water at least 2 times.

– The next morning, drain them and boil them in fresh water for 10 minutes. Drain them well again and leave them on a towel to dry. We remove the thread.

– Make the syrup by boiling the water with the sugar for 5 minutes. Carefully place the roll in the pot and let them simmer until the syrup sets for about 30 minutes. Before turning off the heat, add the lemon juice.

– Let the dessert cool completely. Put it back on the fire and as soon as it boils, close it and while the dessert is still hot, transfer the rolls to sterilized jars and fill them with the syrup.

– Close the jars when the dessert has cooled completely.

Try it with Greek yogurt! You will love it.
