Many times we have the unbridled desire to enjoy a rich breakfast, which is tasty, fast, easy and keeps us full and satisfied for many, many hours. In a bowl, whisk the eggs with the spring onion or oregano or the mint and salt and pepper, until fluffy. Grease a small pan with a little oil and put it on high heat. Pour the egg mixture and spread it all over the bottom of the pan, in a thin omelette.
Put the pieces of bread in the center of the omelette, side by side (leaving a little space between them), let them absorb a little of the egg mixture and turn them on the other side.
Let the omelette with the bread bake on one side and turn it on the other with a spatula.
After it is cooked on the other side, turn the edges of the omelette inwards, making a square package.
Spread the ham and cheese on top and fold the package in half.
Bake for another 1-2 minutes, until the cheese is melted.

Servings: for 1 toast
- 1 slice of toast, cut in half, vertically
- 1/2 chopped green onion or a little oregano or mint (optional)
- 2 eggs
- salt, freshly ground pepper
- a little oil to grease the pan
- 1 slice of ham, cut in half vertically
- 1 slice of cheese or cheddar, cut in half vertically
