Opinion – Barbecue Nation: Learn how to make a margherita sausage with mozzarella and tomatoes

by

If sausage is already good, imagine a version with lots of cheese, tomatoes and basil — irresistible! Today I bring you a recipe that, in addition to being delicious, still takes few ingredients, which makes it a cheaper option than beef.

As a main course, it serves up to two people, and costs around R$16 per head. It can also be a starter or appetizer option for your barbecue.

For this dish, thin spiral sausages are the best option. You can choose the flavor you prefer, as mozzarella, tomato and basil go with everything.

A tip to make life easier when turning is to stick two skewers forming an X, so that they go through the entire length of the sausage, taking all the sections. This will help give the sausage structure.

margherita sausage

INGREDIENTS

500 g thin sausage

200 g sliced mozzarella

50 g of cherry tomatoes

basil leaves

2 barbecue sticks

PREPARATION

  1. Place the skewers on the sausage going along its entire length, forming an X.
  2. Bake over medium heat for 7 minutes, turn over, add the cheese, tomatoes and basil.
  3. In an aluminum pasta drain pan, or on top of a steamer (it needs to be a pan with holes), place the hot coals inside and put it on top of the sausage.
  4. The ember will toast the tomatoes and melt the cheese, giving the recipe a beautiful finish.

This recipe can be made in the oven too, taking the sausage to bake at 240°C for 15 minutes, then put the cheese, tomato and basil, and bake again for another 5 minutes until the cheese melts.

In the skillet with a lid also works: brown one side of the sausage over low heat, about 7 minutes, turn and put the rest of the ingredients and cover. Leave it for another 7 minutes and you’re done!
