Mushroom Pasta with Arugula and Basil – Easy and effortless

A classic pasta preparation, without actually making a sauce

You combine all the flavors in the pan, slow and low, while adding some of the pasta water to enhance the moisture. You can add cream or butter for a richer dish. If you want, you can add a few drops of white truffle and some dry flower cheese.

Materials:

  • Pasta of your choice
  • 2-3 tbsp olive oil
  • 3-4 spring onions, finely chopped
  • 2-3 cloves of garlic, finely chopped
  • Mushrooms
  • 1/2 bunch arugula, chopped
  • 1/2 bunch basil, chopped
  • Salt and freshly ground pepper
  • Truffle oil and grated dry flower cheese for serving

How to make it:

  1. Prepare the pasta, 1-2′ less cooked than indicated on the package instructions.
  2. On a low heat, saute the onion and garlic in the olive oil. Add the mushrooms and pour some of the pasta water. Leave until the liquid evaporates and add the arugula, stirring. Finally add the basil, a little more pasta water and the pasta. Stir for 1-2′ and serve.
  3. We add some fresh onion, extra virgin olive oil, a few drops of white truffle and grated dry flower cheese!
