Make easy no-knead ciabatta rolls – Kids will love it!

Easy and versatile, this bread recipe is a favorite in our house

Crispy crust on the outside and soft crumb on the inside. Perfect for sandwiches, breakfast or dipping in sauces. No kneading or mixer needed, just mix all the ingredients and wait 18 hours.

Form small buns or a large loaf.

Materials:

  • 400g flour for bread (ideally 70% type, we ask for it from the oven)
  • 100g wholemeal flour
  • 1 sachet of dry yeast
  • 360g of water, about 35°C
  • 1-2 tbsp. salt

How to make it:

  1. In a large taper or bowl. mix all the ingredients, with a fork or mixer, until there is no dry flour. Cover with a lid or film and leave for 18 hours in a shady place.
  2. After 18 hours, beat the dough to deflate and break the bubbles. Turn over on the counter and with a pastry cutter cut into 6 pieces. Spread a towel and sprinkle it with plenty of flour.
  3. On top of that we place one piece of dough, shape it with the handful or our hands. Take the towel and turn the bread upside down in the oven tray, so that the side with the most flour is on top. We have greased the pan and sprinkled it with fine semolina.
  4. Bake in a preheated oven at 210°C over low heat for 25-30′.

*The bowl in which we will make the dough should have plenty of room.

*The dough is quite moist, so it will be difficult to handle without a handful of pastry. *When we grease and sprinkle with semolina the pan, the semolina that is around the buns burns. Some people don’t like this smell. Alternatively, we can put greaseproof paper. Making bread is quite a complex process with many parameters affecting the final result.
That’s why not all bakeries have the same bread. However, making good bread at home is not that difficult!
