Tender pieces of pork create a layer for the mushrooms and a few more vegetables to rest on
It is a dish like no other. The juices from the vegetables drip onto the meat and mushrooms, resulting in wonderfully roasted vegetables alongside juicy meat and mushrooms.
What you will need:
- 1.5 kilos of pork in bite size pieces
- 500 g white mushrooms cut into 4
- 2-3 large red onions in rings
- 2-3 green peppers in slices
- 3-4 tomatoes in slices
- 1 package of tomato passata (500g)
- 4-5 tbsp. olive oil, oregano, salt and freshly ground pepper
- Grated hard cheese, graviera, kefalotyri or regato
How to make it:
- In our pan, season the pieces of meat with salt and pepper and cover them with a little olive oil and oregano. We put the meat in our pan and make a layer of mushrooms, then onions and peppers.
- Cover with the passata, salt, pepper and a little more oregano. Preheat the oven to 250°C over low heat and put our pan inside. After 30′ lower to 210°C and continue for another 30′.
- Open the oven and add the tomatoes in layers. Bake for another 30′. 5′ before the end, sprinkle with cheese. As soon as we take it out of the oven, let it cool a little and serve.
