- 3 cloves garlic, melted

- 3 cups chicken or vegetable stock
- 400 ml coconut milk
- 2 lime leaves
- 1 large sweet potato, peeled and chopped
- 400 grams black lentils, boiled for 10-15 minutes and drained
- 200 grams of kidney beans trimmed and halved, boiled 10 minutes
- 1/3 cup roasted cashews, coarsely chopped
What you will need:
- Heat the oil in a large pot or deep frying pan and add the onion. Cook on medium heat for 8 minutes, until they are soft but not colored.
- Add the garlic, ginger, fish sauce and curry paste and stir to combine. Add the stock, coconut milk and lime leaves and let simmer for 5 minutes. Add the sweet potato and cook for another 15 minutes. Add the lentils and beans, cook for a final 5 minutes, then serve immediately.
