Tasty and aromatic soup with lentils and curry

A tasty, aromatic, nutritious and comfort soup that you can make on a cold day.

What you will need:

  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 3 cloves garlic, melted
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons fish sauce
  • ½ cup Thai yellow curry paste
  • 3 cups chicken or vegetable stock
  • 400 ml coconut milk
  • 2 lime leaves
  • 1 large sweet potato, peeled and chopped
  • 400 grams black lentils, boiled for 10-15 minutes and drained
  • 200 grams of kidney beans trimmed and halved, boiled 10 minutes
  • 1/3 cup roasted cashews, coarsely chopped

What you will need:

  1. Heat the oil in a large pot or deep frying pan and add the onion. Cook on medium heat for 8 minutes, until they are soft but not colored.
  2. Add the garlic, ginger, fish sauce and curry paste and stir to combine. Add the stock, coconut milk and lime leaves and let simmer for 5 minutes. Add the sweet potato and cook for another 15 minutes. Add the lentils and beans, cook for a final 5 minutes, then serve immediately.
