The list of intangible heritage of humanity currently includes more than 530 items

After the French baguette, it was the turn of the Tunisian harissa to be listed by Unesco in the intangible heritage of humanity.

Its Intangible Cultural Heritage Committee Unescowhich meets in Rabat, Morocco and honors traditions that need to be saved rather than the products themselves, announced that it has listed “harissa, knowledge, know-how and culinary and social practices” as intangible heritage.

Harissa is made from sun-dried peppers, hot spices and olive oil, which helps in preservation and softens the hot taste. It is found on every dish in Tunisia and is exported to many countries.

“It is used as a condiment, as an ingredient, and even as an independent dish. Harissa is known throughout the Tunisian territory, where it is prepared and consumed, mainly in the regions where the pepper is grown,” the Tunisian nomination file states.

“It is considered an element of the national culinary identity and a factor of social cohesion. It is prepared and consumed throughout the Tunisian territory and is considered an element that unites the country.”

The Convention on the Safeguarding of the Intangible Cultural Heritage promotes the preservation of the knowledge and know-how necessary in traditional crafts.

A tool of cultural diplomacy, it rewards “cultural practices that are passed down from generation to generation, such as oral traditions, performing arts, social practices, rituals and festive events or even knowledge and practices related to nature and the world”.

The list of intangible heritage of humanity currently includes more than 530 items, 72 of which are in need of urgent conservation measures.
