Discover 5 restaurants to try Japanese noodles served cold

A typical dish of Japanese cuisine that has fallen in love with the public in São Paulo, ramen, served with a hot broth and other accompaniments, is one of the pastas that, in summer, is also served cold to help combat high temperatures.

Following the tradition of serving cold or frozen versions of some of their hot dishes, Japanese restaurants add dishes such as zaru udon and zaru soba to their menus, refreshing versions of pasta made with wheat flour and buckwheat, respectively.

The two dishes become part of the summer menu at Aizomê, a restaurant located inside Japan House São Paulo. Conceived by chef Telma Shiraishi, the two suggestions give the public the chance to taste dishes other than ramen.

“We currently have many houses specializing in their preparation, but at Aizomê we always serve the most traditional noodle recipes in Japan, hence the constant presence of udon and soba on our menus. known for their cold, light and tasty recipes”, says the chef.

“When we talk about zaru udon or zaru soba, we mean boiled and cooled noodles, served on a bamboo mat. I love to serve and enjoy the cold noodles with a very crunchy tempura.”

Aizome | Japan House Sao Paulo

The restaurant located inside the Japan House features two chilled variations of their hot noodles, zaru soba and zaru udon, served on a bamboo mat. Each dish costs R$79.

jinroku

The restaurant works with some variations of the dish on its menu, but the flagship is the Hiyashi Chuka, a ramen served chilled, accompanied by a sweet and sour sauce made up of cucumber, egg, ham and seaweed, for R$46.

ramen kazu

Neighboring Jinroku, also in Liberdade, the restaurant offers shoyu hiyashi tyuka, pasta served in a cold sauce with sesame, bean sprouts and egg, among other complements, for R$63.20.

jojo ramen

The popular salon in Paraíso serves a maze soba on its summer menu. It is ramen without broth, made with whole-grain pasta and a soy-based sauce, a mix of mushrooms and vegetables and a cured egg yolk (R$46).

Opened 14 years ago, the traditional restaurant maintains the same menu to this day. Among the suggestions is potato pasta, cold, served with red sauce with cucumber, turnip, pear, boiled egg and meat. The dish costs R$57.
