In this list of yours you should, and it is worth it, put today’s recipe. A recipe for baked potatoes with basil pesto and parmesan. Are you thinking of more ideal food for the approaching holidays?
Materials:
- 2-3 kilos of potatoes of your choice (normal, baby, etc.)
- 300 grams of pesto, half for baking and half for dressing
- 1 tablespoon olive oil
- a little salt and pepper
- 1 garlic
- 1/2 cup grated parmesan
- juice of 1/2 large lemon
- Optional: Parmesan chips and basil leaves for serving
Implementation:
Preheat the oven to 200 degrees.
Prepare the potatoes. If the potatoes are large, cut them in half. Put the potatoes in a large pan. Add 1/2 of the pesto, 1 tablespoon olive oil, a large pinch of salt and pepper and mix to cover the potatoes.
Chop the garlic on top. Put the pan in the oven and bake for 45-50 minutes. In about half, add the grated Parmesan and turn the potatoes over. Continue baking until crispy and soft.
Remove the pan from the oven. Add a little chopped garlic to the remaining pesto and mix it. Pour the garlic pesto over the hot potatoes. To serve, place the hot potatoes in the serving bowl, drizzle with lemon juice, add grated parmesan and basil leaves.
