Easy recipe and a dessert you will love
What you will need:
- 300 grams pitted dates, coarsely chopped
- 100 grams of butter cut into cubes
- 1 cup of water
- ½ cup brown sugar
- ¼ cup molasses
- ¼ teaspoon salt
- 1 tablespoon of ginger
- 1 teaspoon of baking soda
- 1 ¼ cup plain flour
- 2 tablespoons of good quality cocoa
- 1 teaspoon of baking powder
- 2 large eggs, lightly beaten
- 100 grams dark chocolate, coarsely chopped (72% cocoa)

How to make it:
- Preheat the oven to 160°C, fan.
- In a medium saucepan, bring the dates, butter, water, brown sugar, salt and ginger to a boil, stirring frequently.
- Lower the heat and simmer for 5 minutes. Then with a hand blender puree the mixture. Set aside for 20 minutes and then add the baking soda. You know it will foam.
- Mix the flour, eggs, cocoa and baking powder and add to the warm mixture. Combine the ingredients well with gentle movements.
- Add the ginger and half the chocolate. Pour into the pan and spread evenly. Sprinkle with the remaining chocolate, then bake for about 25 minutes or until set. Served hot with caramel sauce and ice cream
sauce:
- 1 cup brown sugar
- 120 grams of butter cut into cubes
- ⅔ cup cream
- Bring all the ingredients to a boil in a medium saucepan, stirring to dissolve the sugar. Simmer for 5 minutes to thicken the mixture. To serve you will reheat it.
