Chef Onildo Rocha, from Paraíba, who runs the kitchen at Priceless, a complex that occupies the top floor of the Light mall in São Paulo, traveled along the São Francisco River for 11 days to compose the first themed menu at the Notiê restaurant.
The season “Sertões por Rio São Francisco” is available in two menus: one with 10 times (R$ 390) and another with 14 times (R$ 475), which can be paired with wines selected by sommelière Andrea Vilas Boas. In addition to the dishes, the expedition generated 10 episodes that tell about the places visited, available here. The menus are themed and temporary, and should last from four to six months.
In the restaurant, the ingredient is the protagonist. You will find pitomba, saburica, pitu and babassu oil, but in new applications and with unusual preparations. Notiê’s proposal is not to be a restaurant with traditional Brazilian cuisine, but a house with a Brazilian chef who uses regional ingredients to create different dishes, using classic and contemporary techniques. The focus is on the experience and it involves not only the flavors, but also the ambiance, the music, a multisensory experience.
Rocha traveled to five states where he met local ingredients, preparations and cooks with whom he shared experiences. The result can be seen in this gallery of images above. These are dishes with great aesthetic concern and notable technical precision, which make us already curious to know what the next season’s menu will be like.
