Pasta with pancetta and tomato sauce
There is no one who does not love pasta, especially when combined with red sauce and meat. A hearty recipe you’ll both love.
Materials: Pancetta, diced
- 2 tablespoons of olive oil
- 1 finely chopped onion
- 2 cloves of garlic
- 1 can of tomato paste
- 1 kg of linguine or pasta of your choice
- 1/2 cup grated Pecorino Romano
- Salt, red pepper
Implementation: In a large pan, add the pancetta and olive oil and sauté until golden brown, about 8 minutes. Add the onion and sauté until softened, about 5 minutes. Then add the salt, pepper, and garlic and sauté until fragrant, about 30 seconds. Mix with the tomato paste. Simmer over medium-low heat until the sauce has thickened slightly and the flavors have blended, about 15 minutes.
Meanwhile, cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain and reserve 1 cup of the liquid.
Toss the pasta with the sauce in the pan, adding some of the reserved liquid until the pasta is moist, but being careful not to dilute the sauce. Mix with the cheese. Add salt to taste.
