They look like a snail’s shell, they are puffy like a croissant but with a totally different shape as they are round. The supreme rolls were successful in New York and landed in bakeries and pastry shops in all regions of the city of São Paulo.

The sweet is made with the same dough as half-moon bread, but cut into strips and baked in a round mold. This preparation makes the bread more rigid and crispy. The puff pastry is filled with pistachio and chocolate.

It all started in April 2022, when Lafayette bakery in Manhattan created the supreme. Soon, he appeared in videos on social networks with a kind of “food porn”, in which the dough was split in half and the filling oozed out.

On TikTok, the hashtag #supremecroissants has 18 million views and #croissantroll more than 29 million.

In the capital of São Paulo, fashion spreads little by little. Around here, the candy appears with different flavors and names. Some bakeries even serve puff pastry with cheese and leaves.

89ºC Coffee Station

The cafeteria, which is always full on weekends, added a sweet New York roll to its menu at the end of July. The flavors are Nutella, brigadeiro, chocolate cream, pistachio and caramel with apple. Each one costs R$ 19.50.

The artisan food house recently started serving the NY roll made by chef Edgar Rodrigues. They are filled with cream, dulce de leche, nutella and pistachios, and cost R$20.

Kez Bakery

The supreme served at the bakery is cinnamon mousseline covered with white chocolate and cinnamon; the cost is R$18. For now, this is the only flavor, but others are already being tested. The house also highlights its bagels —great donuts—, in both sweet and savory recipes.

Levena

Chef Diego Lozano’s space has on the menu the supreme stuffed with dulce de leche and covered with dark chocolate with tonka bean. There is also the cinammon roll, stuffed with cinnamon cream, topped with raisins and cream cheese. Both cost R$25. In addition to the sweet versions, the chef prepares one with black olive cream, as well as the supreme avocado, a sandwich stuffed with avocado, smoked salmon, fried egg and sour cream.

Mag Market

The confectionery run by chef Tássia Magalhães, from the Italian restaurant Nelita, has been serving her puff pastry snail covered with gold chocolate and stuffed with vanilla cream and toffee caramel since May, for R$18.

Panker

Renata Birta started making the supreme after a friend who lives in New York told her about the fame of the pastry there. She says the preparation process takes about two days. There are three fixed flavors on the menu: red fruits, passion fruit and pistachio. And every week there is a different flavor, such as corn, strawberry or lotus biscuit.

San Lorenzo Gelateria

The pastry shop, which also bets on well-prepared desserts, sells rolls with flavors that vary according to the batch of the day. Among them are pistachio, hazelnut cream, vanilla with red fruits and dulce de leche. Each costs $22.

Santiago Artisanal Bakery

The bakery has been making round-shaped croissant dough since July. It sells versions filled with lemon meringue cream and caramel topped with chocolate ganache. The value is R$ 22.

There’s umami

The shop serves what it calls croassonho in various flavors. You can try the vanilla one, for R$16, or the raspberry and pistachio one, both for R$18. The customer can book the order by phone until 5 pm, but there are puffs available at the counter for withdrawal without reservation. The space also works as an ice cream shop.

Tre Bimbi

The place, opened in December, is a combination of an ice cream parlor and a bakery that started serving rolls in April. They are prepared from Friday to Sunday in pistachio, hazelnut, crème patissière and chocolate flavours. They cost BRL 28.90. In addition to pastries, the menu has gelato, Italian sweets and
natural fermentation breads. It also serves in the salty version, for R$ 29.90
