A spicy chicken dish with lemon and mint sauce. Grilled (or roasted) chicken, served bowl style with pasta or rice, roasted peppers, avocado, feta, cucumber and the most deliciously addictive mint sauce.

It doesn’t get any easier or tastier than roast chicken… simple, quick, colorful, super flavorful and oh so delicious.

What you will need:

  • 6 chicken skewers (you can also get them ready-made)
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of balsamic vinegar
  • 2 teaspoons of smoked paprika
  • 1 tablespoon dried oregano
  • 1 small shallot, chopped
  • 2 cloves garlic, minced or grated
  • zest and juice of 1 lemon
  • 1 pinch of bukovo
  • salt and black pepper
  • 2-3 cups of cooked rice, barley or couscous, for serving
  • 1 roasted red pepper, sliced
  • 200g feta, diced or crumbled
  • sliced ​​avocado, cucumbers, olives and basil, for serving

For the Sizzled Mint Goddess Sauce

  • 1/4 cup extra virgin olive oil
  • 1 tablespoon fresh mint, chopped
  • 1 cup plain yogurt
  • 1/2 cup fresh basil or parsley, chopped
  • juice of 1 lemon
  • 1 jalapeño, cut in half
  • 1 teaspoon cumin
  • salt

How to make it:

  1. In a resealable bag, put the chicken, olive oil, balsamic vinegar, paprika, oregano, shallots, garlic, lemon juice, lemon zest, cracked red pepper and a large pinch of salt. Marinate for 15 minutes or overnight in the refrigerator.
  2. Heat the olive oil in a small pan over medium heat. When the oil is well heated, remove the pan from the heat and stir in the mint until golden brown. Put it aside.
  3. In a medium bowl, combine the yogurt, basil, lemon juice, jalapeño, cumin and a pinch of salt.
  4. Set the grill, grill or pan to medium-high heat. Alternatively, you can bake the chicken at 200 degrees for 20-30 minutes. Or take the skewers ready, baked.
  5. To serve, spread the yogurt sauce on plates and drizzle with the olive oil. Add the pasta or rice, peppers, feta cheese, avocado, cucumbers, olives and chicken. Sprinkle with some mint and parsley.
