  • Bean velouté with crispy bacon

Ingredients for 4 people:

  • 200g white beans moderately soaked overnight and drained
  • 1 carrot into 4 pieces
  • 1 large onion
  • 6 cloves
  • 2 bay leaves
  • 1 sliced ​​leek
  • 1/3 fl. olive oil
  • Chopped chives or celery
  • A little dry thyme or oregano
  • Salt, freshly ground pepper

For serving:

  • 8 slices of bacon, cut into pieces
  • Bruschettas

Implementation: First, you will clean the onion and pin the cloves on it so that it is easier to remove them at the end. You will throw it in a pot together with the beans, carrot and bay leaf. You will add water until it covers the beans and then you will let it boil.

In another pot, heat the olive oil and add the chives for a few minutes. You will then add the contents of the pot with the beans and boil for an additional 30 minutes. Finally, you will season with salt and pepper and mash until it acquires a velvety texture.

You can serve the soup in deep plates or bowls and decorate with the crispy bacon after frying it first, and accompany it with bruschetta.

  • Salad with beans and mustard vinaigrette

A hearty salad that you can combine with seafood and fish, while at the same time you will also enjoy it as a main course.

Materials:

  • 250g white beans soaked
  • 2-3 spring onions, finely chopped
  • 1 medium onion, finely chopped
  • 1 Florin pepper cut into cubes
  • ½ cup parsley, chopped
  • 2 tsp. tablespoon mint, chopped
  • Salt Pepper

For the vinaigrette:

  • 2/3 cup olive oil
  • Juice of one lemon
  • 2 tbsp mustard

Implementation:

After boiling the beans in salted water until soft, drain them and let them cool in a bowl. At the same time, you prepare the rest of the ingredients, put them in the bowl, season with salt and pepper and mix well. Finally, you add the vinaigrette, mixing its ingredients and serve.

  • Fagioli e scarole (Beans with endives and sausage)

Ingredients for 6 people:

  • 200 gr. white beans
  • 2 carrots
  • 2 sticks of celery
  • 1 onion
  • 1 small pepperoncino
  • 150 ml e.p. olive oil
  • 3 sausages
  • 2 tsp. tomato paste soup
  • 1 kilo of endives
  • Olive oil
  • Salt Pepper

Implementation:

After soaking and boiling the beans, strain them and keep 2 cups of the boiling water. Cut the vegetables and pepperoncino into small squares. Then, in another pot, heat olive oil over medium-high heat and fry the chopped vegetables until they caramelize. Finally, you will add the sausages cut in two, the paste, and while mixing, you will also add the endives, roughly chopped. Ready!

  • Beans with shrimp, tomato and basil

A quick dish if you have soaked your beans the night before, as the prawns will only take half an hour to be ready.

Ingredients for the shrimp:

  • 500 gr. large prawns, cleaned
  • 1 clove of garlic
  • 50 ml olive oil
  • Juice of 1/2 lemon
  • 50 ml dry white wine
  • Salt, freshly ground pepper

For the beans:

  • 2 fl. small white beans
  • 2 fl. chopped ripe tomatoes
  • Fresh basil
  • 4 cloves of garlic, finely chopped
  • 1 tsp. spicy mustard
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • Salt, freshly ground pepper

Implementation:

After soaking and boiling the beans, drain them and add the tomatoes, basil, garlic, mustard, vinegar, olive oil, salt and pepper and mix well. At the same time, put the shrimps in a large bowl and add the olive oil, garlic, wine, lemon juice, salt and pepper. Mix well and set aside for 15 minutes.

You will preheat your oven to a high temperature and spread the shrimps in a medium pan, along with their marinade. You will cook for 5-7 minutes turning them on both sides. Finally, you will divide the bean-tomato mixture into plates and on top you will put 3-4 shrimps, with a little of the juice of the pan, if there is any left.
