In the cockpit of the kitchen is Executive Chef Thierry Paludetto from Toulouse, along with his eight chefs from around the world. The menu includes a selection of street food, tiraditos, ceviche and tartare: everything from a charcoal robata grill to steamed in a wok or as tempura.
