You cook more than you should
It is good to limit yourself each time to cooking the number of portions that will be consumed at the following meal. Although cooking more spaghetti saves you time and money. If you are not good with calculations, a simple way is to calculate 75 g. (uncooked) spaghetti for a normal serving of one person.

You are using a small pot
If you are between using the small or the large pot, always choose the larger one. Fill 2/3 of it with water (you need at least 2 liters of water to cook the spaghetti properly) so that they “have their space”. Cook them properly and avoid annoying sticking between them. What many try to avoid by adding oil, which is a myth.

You don’t salt the water
One of the secrets to good cooking when it comes to spaghetti is, as mentioned above, enough water. Here we come to add the salt (~30 g of salt / 2 liters of water). The moment you add the spaghetti to the pot is also important. Don’t bother if the water doesn’t boil, because if you do, your spaghetti will become sticky and won’t cook properly.

Throw away the water in which you boiled the spaghetti
It is now a common secret that a little water from what the spaghetti was boiled in makes your sauce tastier and “ties” it in a natural way. So, next time, keep some of the water aside and add as much as you see your sauce needs. The result will impress you.

You put too much sauce
The hungrier, the more sauce. But drowning your spaghetti in sauce will end up making your pasta too heavy. As a result, you may not enjoy them as much as you would like (unless you are very hungry). Come on, not all pastas need a sauce. Try combining tortellini with a spinach-cheese filling, with a little herbed butter or a little fresh oil. The sequence in adding the sauce is also important. This means that you have to put the spaghetti in the sauce and not the other way around. Once you’ve drained the spaghetti (and you’ve made sure to keep some water), you add it to the pot where you made the sauce. If necessary, add some of the reserved water and continue cooking for a few more minutes.

And how wrong you are! Pasta, accompanied by the right sauce, can become a very special and festive dish. In Italy every festive meal starts with pasta with the common factor of all being local and fresh ingredients. A good idea for Christmas this year is to make a pasta with Christmas minced meat, which will contain the ingredients that the turkey stuffing contains, such as pine nuts, chestnuts, raisins and plenty of grated gruyere!
