Materials:

  • 1 cup all purpose flour
  • 1⁄2 cup white sugar
  • 1 teaspoon of baking soda
  • Pinch of salt
  • 1⁄2 cup freshly squeezed orange juice
  • 1⁄4 cup almond milk (or your preference)
  • 1⁄4 cup vegetable oil
  • 1 teaspoon of apple cider vinegar
  • 1 teaspoon vanilla
  • Zest from 1 orange
  • 1 & 1⁄2 tbsp cocoa powder
  • 250g container of sugar-free coconut yogurt
  • Pomegranate seeds
  • Zest from 1 orange or slices

Implementation:

  1. First of all, mix the orange juice and milk together and let them rest (about 5 minutes) while you prepare the rest.
  2. Preheat the oven to 180°C and line a non-stick paper or grease the mold or tray.
  3. In a bowl sift and combine all the solid ingredients. Sifting isn’t everyone’s favorite, but trust me, it makes a big difference. Put everything in a bowl and mix well with a fork. Add all remaining liquid ingredients to the milk and juice mixture and mix until combined.
  4. With either a hand mixer or a stand mixer, pour in the wet ingredients and mix while gradually adding the dry ingredients. Divide the dough in half – in one half add the orange zest (and mix) and in the other half sift the cocoa powder (this must be sifted so that there are no lumps).
  5. Last step! Pour half of your orange batter into the pan and alternate with the chocolate batter until it’s all gone. Then, with a chopstick, the end of a spoon or a toothpick, make the swirls. Place in the oven to bake for 32-35 minutes or until a toothpick comes out clean.
  6. Once it’s out of the oven, let it rest for 5 minutes in the tin, then turn it out onto a wire rack to cool completely. Then, spread the coconut yogurt on top of the cake, sprinkle with orange zest or orange slices.
