Sapadaria is an artisanal bakery created in 2020 that operates to order in the city of São Paulo. The name is a fusion between the words “dyke”, slang for lesbian, and bakery. This is because the owner of the business, chef Catharina Fischer, is a homosexual woman.

During the pandemic, the chef, who worked in restaurants such as DOM, Dalva e Dito e Kouzina, decided to have her own establishment. In full social isolation, she resigned from her old job and opened Sapadaria in partnership with her old girlfriend. Her goal was to merge activism in the LGBTQIA + cause with the desire to work with authorial products.
In the beginning, the bakery had a total production of six loaves of bread per day. Currently, the business has moved beyond home scale and has the infrastructure to produce hundreds daily. The business has two employees. Catharina is CEO, buyer, cook, administrator, seller and delivery person. Thaís, her girlfriend, works producing professional photos and taking care of the brand’s social networks.
Sapadaria currently works supplying products to restaurants, bars, cafes and buffets and, on Fridays, delivers batches to customers who order via WhatsApp. It is also possible to hire the service for coffee breaks, events and corporate fairs.
The store is currently expanding, with new customers arriving every day. Sapadaria’s next challenge is to open a physical store and, to do so, it is looking for investors. There is also a plan to create a business model to franchise the brand in other cities in Brazil.
The menu includes delicacies such as naturally fermented bread, focaccia, cinnamon rolls and brownies. For the month of June, when LGBTQIA+ Pride is celebrated, the chef is preparing the launch of a new menu.
